Meet the Man Behind the Revolution
“My grandmother would start cooking three days before a party — so the mole had time to become what it was meant to be. That patience, that love, is what I brought to Canada.”
José “Pepe” Hadad was born in Mexico City and raised in the warmth of his grandmother’s kitchen, where food was never rushed; it was crafted with intention, memory, and love.
After working in Alaskan fish canneries at 18 to save $20,000 for culinary school, Jose arrived in Toronto in 2001 with big dreams and a Red Seal in the making. He trained under Canada’s finest — Chef Mark McEwan at Bymark, farm-to-table legend Michael Stadtländer at Eigensinn Farm — often working for little or no pay, just for the experience.
But it was at St. Lawrence Market in 2006 that everything changed. Starting with just $120, Jose launched Mad Mexican. He’d wake at 4 a.m. to chop, smash and stir. He refused to compromise on a single ingredient.
Today, Mad Mexican is in over 400 stores across Ontario, and every product is still made the same way: no preservatives, no shortcuts, no apologies.
Now, Jose is opening up his kitchen to you. The recipes, the stories, the techniques his grandmother never wrote down — this is the Recipe Club.
